Save the extra citrus syrup you can use for morning drinks, sweets, or to make additional servings of bikinis.

Bikini Recipe

Yields 10 people

To make the Citrus Syrup (yields 750ml)

300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g granulated sugar

For the Drink (produces 850ml, serving 10)

400ml good quality vodka
100ml dry gin
150ml peach-flavored liqueur
200ml citrus syrup (as made above)
Fresh cranberries, as a garnish
Mandarin essential oil, as a final touch

Directions

To prepare the Syrup: Put the listed ingredients in a pot, heat until it reaches a light boil, agitating until the sugar dissolves. Then, take off the heat allowing it to cool down completely. Pour to a clean bottle, close it and store in the refrigerator, it can be stored for about four weeks.

Preparing the Cocktail Base: Mix all the spirits and syrup into a sizeable container, let it rest for an hour, then filter it best through a fine cloth, so it's completely strained.

To serve: Add 85ml from the cocktail base into your cocktail shaker packed with ice, and agitate lightly for about 60 seconds to cool it down. Pour to a frosted cocktail glass or equivalent, decorate with a few cranberries adding the final touch by giving it a brief mist of the essential oil above the glass.
